I’ve been able to maintain my weight for about a year now. I’ve stayed around 300lbs. I know I have some sort of inability to control portions. I eat & eat until I’m past full. Sometimes I eat when I’m pissed or emotional about whatever. I finally figured out in the past year that isn’t going to fly if I ever want to see what its like to be…to be what exactly I didn’t know what I was going to type just there. Normal? Not fat? Skinny? Healthy? The last one is most accurate. Healthy. I did a fair amount of keto last year “2018” and along with a pill called Phentramine I was able to drop close to 100lbs. I was around 400lbs+. I don’t exactly have a label to put on my diet changes other then it’s different. I’m making myself more aware of the mistakes I make sooner then to late. I do some “Keto” meaning consuming 20-50 grams of carbs per day. I eat a high protein diet & made a lot of small changes. I drink more water & coffee. My wife & I recently found “Mug Cakes”. This shit changed my life honestly. I’m a cake man. Take that for what you will but if it’s there I will eat that shit. So mug cakes. They are quick to make, require very little & cook in the microwave in 90 seconds. We added blueberries last night and that shit blew my mind.
Table time! Let me clairfy what that is from my last post. It’s time me & my wife sit aside 2 times a week to just connect. Whether its talking, listening to an audio book or playing a board game. It sounds ridiculous that you need to “set” aside time but when you live a full life of 3 kids & a 40hr a week job shit gets far more complicated then you ever thought imaginable. I think it’s time to make another mug cake. I will leave a recipe at the bottom & possibly make another post with a picture of my masterpiece!
1 Tbsp butter melted
2 Tbsp cream cheese full fat
2 Tbsp coconut flour
1 Tbsp granulated sweetner of choice (we use truvia or pyure)
1 tsp vanilla extract (any extract or flavor can be used)
1/4 tsp baking powder
1 egg
6-10 berries
Place butter & cream cheese in your mug of choice. Microwave on HIGH for 20 seconds. We do it in 10 second intervals.
Add coconut flour, sweetner, vanilla & baking powder. Mix it together. Add the egg. Mix it again until it’s a batter. Shove the berries down into it & microwave for 90 seconds! Viola!
